Essential Fatty Acids or EFA's could well be called the fats that keep you thin. These polyunsaturated fats are recommended as a part of a well balanced diet. When a body is deficient in EFA's, it changes sugar to fat much more rapidly than is normal, causing blood sugar levels to plummet, leaving one feeling hungry all the time. The result is often overeating and weight gain.
Like vitamins and minerals, we need a balance of the good fats from the Omega 3 and 6 fatty acid families. These groups of essential fatty acids (EFA's) are necessary for the regulation of every function in the human body. They must be present in the diet along with vitamins to produce sex and adrenal hormones and control cell growth. They are a component of the outer membrane of every cell where they protect against viruses, bacteria, and allergies. They help dissolve body fat into body fluids, decreasing blood cholesterol and triglyceride levels. EFA's also distribute the fat-soluble vitamins A, D, E and K throughout the body, insulate nerves, and help maintain equal body temperature.
